This delicious Captain Crunch French Toast recipe is a nod to one of my favorite hometown restaurants who serves this dish for brunch and has filled up many of my High School memories. It is very easy, kid-friendly (have them help you in the kitchen for fun!) and will cure any sweet tooth (you’ve been warned!) I made it from my cousin and Uncle when they arrived in Texas after a long day of moving/traveling. It was a nice treat to be able to enjoy a hearty breakfast together and give our guests a new dish during quarantine (I’m sure we’ve all already cycled through our 10 go-to recipes, lol). Read on for my quick and easy Captain Crunch French Toast recipe.
Ingredients:
French brioche bread (my favorite for any type of french toast is the sliced French brioche bread from Trader Joe’s (it has a pretty blue label), but any thick, fluffy bread will do.)
4 cups (give or take) Captain Crunch – just buy the box
4 eggs
1 cup milk
4 tsp vanilla
1/3 cup flour
1 dash of cinnamon
1 dash nutmeg
1/4 tsp salt
Estimated 12 min total until plating
*The original recipe I have based my french toast off of calls for 2 tbsp. sugar – when doing the captain crunch version, I would hold the sugar. The cereal offers enough.
**Not a fan of Captain Crunch? You can remove that part from the recipe and follow the remaining directions for normal, delicious french toast.
Put captain crunch into a ziploc bag and crush cereal with a spoon/fork/etc. until cereal is broken up but not small enough to resemble a powder.
Whisk eggs and mix in remaining ingredients. Coat bread in the egg mixture (both sides), repeat with cereal pieces, and then transfer to your skillet (which should be coated with nonstick spray and on medium heat). Cook slices (I usually do 3 at a time) for ~2 min on each side, reducing the heat if they cook too fast. You want them to get heated throughout and boast a light brown glaze.
Remove from heat, top with butter, syrup, or any topping of your choosing, and enjoy!
